Okay, so I'm not a morning person. It must be hereditary too because neither are our children, so mornings in our house hold are generally chaos. We move like turtles for the first hour and a half and then frantically run around wondering why we're late for the next 15 minutes.
Enter slow cooked porridge. It's the best thing for our morning chaos. Breakfast is ready as soon as we're out of bed and the house smells like an expensive candle (never mind what the house looks like...). Apple + Cinnamon is popular with the kids but we experimented with a choice-coconut last night and it's been a hit. Give it a shot!
- 3 cups oats
- 1 can coconut milk
- 2 empty coconut milk cans of water
- 3 tbs cacao
- 2 tbs desiccated coconut
- pinch salt
- rice malt syrup or honey to taste
- coconut, berries, banana, nuts - whatever! to serve
First grease your slow cooker generously with coconut oil or butter so you don't need to leave it soaking for three days after you're done - it has a tendency to stick. Then chuck in oats, coconut milk, water, cacao, coconut and salt and give it a but of a mix. Pop your slow cooker on just before you go to bed on the low setting and leave it overnight to cook. Voila! Breakfast is done. Serve it up, add your sweetener and toppings and serve with a bucket of coffee. There, you're ready to face the day.
Just a side note...I know slow cookers vary in temperature so consider doing a day run to make sure it's not going to be on too long for you. Ours is on for about 7 hours xo
